The context

The restaurant needed the work to fit the concept.

Sandbar operates with a deliberately small food and beverage menu. The objective was not to add items. It was to improve the repeatability of what already belonged on the menu and use temporary cocktail features for special occasions.

OPERATING LESSON

Operational improvement does not always mean more. A disciplined small menu can create better consistency, lower complexity, and a clearer guest promise.

Scope of work

What Josh worked on.

  • Reviewed and improved food-prep systems.
  • Consulted on recipe structure and standardization.
  • Improved execution expectations for the core menu.
  • Planned special-event cocktails with defined recipes and specifications.
  • Protected the simplicity of the permanent menu rather than expanding it unnecessarily.

Why it matters

The same deliverable would have been wrong for every restaurant.

The value was in matching the work to the actual operating need - broad systems support for an opening, focused menu economics for a food program, or execution discipline for a compact concept.
